I've never had occasion to use it but I believe that VMWare has a shrink
functionality as well. It's part of the VM tools run from within the VM.

54 servers total. Some perfectly provisioned some are grossly over provisioned
on the not Boot volumes (Disks)
Looks like
Shrinking in Windows. (To prevent data loss during V2V.)
Then
V2V outside of windows (Down time)

What have you over allocated?
CPUs and memory are easy to change on the fly
Storage depending on your environment can be trickier but not insurmountable.
