It
seems that if you use the /XF switch, i.e "robocopy C:\source d:\destination
/mir /xf *.txt" the mirror will not copy or delete text files
from the source or destination. Of course you can replace *.txt with any
file, directory or wildcard.

I know you can exclude files from the source but can you exclude files from the destination as well?
