Running BE in a virtual isn't a problem if you supply it with sufficient CPU 
and RAM. Are the Windows Server files stored on a SAN or local? If they are on 
shared storage then you can "possibly" just shut down the guest(s) then the 
Host and install the card, bring it up with the install package on the CD 
already in place to boot and do a quick fresh install (taking note of all your 
network/storage/naming convention settings) but again, this isn't beginners 
level stuff.
