With every other OS that offers a choice (I have experience with various 
flavors of *nix, Novell and OS/2)  there has always been a noticeable 
speed increase in NOT running the GUI.  I would expect Windows to be no 
different.

Hopefully MS also fixed Windows @^%# caching algorithms in Server 2008 so 
it quits touching disk constantly, even when it has gobs of free physical 
RAM.  I think that's the biggest reason Linux gets better performance 
numbers in general - Windows constant disk access is a drag on the system 
:(
