If I just wanted to exclude all of it, I'd just exclude all of it using the GPO mechanism that comes with Windows. I don't need a third-party product for that. My issue is I want to back up *some* of it. :) The iTunes backup folder is <%UserName%\Application Data\Apple Computer\MobileSync\Backup\>. In there, you find several folders with names like <7b1dc23d2564645a20bc8b66c701a2592c0e499c>. Under each folder are a few hundred files with names like <f1ae94b0cb34ea0fd8be09fe9f9e1ad9b5c3924d>. No file extensions; no human-friendly names. The <Backup> folder I'm looking at right now is 630 MB total. I've never used either AppSense or Citrix User Profile Manager before, and don't really know what they do, but from the product web pages they don't seem to be trying to solve this problem. If I'm missing something, by all means, please hit me over the head with it. AppSense, in particular, has always mystified me. I visit their website and I'm not even sure what their products *are*. I get the feeling it's intended for a large organization where simply managing GPOs is itself a challenge. We're ~130 people.
