iTunes always performs a backup before it upgrades any device. If you cancel the backup, the upgrade won't even continue. That said, I do not believe the backup contains the Contacts, rather, it re-syncs them after the upgrade is complete. That may be different if the setting in iTunes is to not sync contacts.
