Well if your entire VMWare infrastructure goes down it's possible to have issues with DNS unless the virtualized DNS server is set to auto restart AND be the first machine to come up. It's entirely possible to have everything virtualized but IMO having a single physical DNS server is just good redundancy planning that can save some angst during a stressful situation like everything going down at once.. YMMV
