At a guess, it's because the Essentials Plus bundle specifies 6 processors with unlimited cores - that makes it a good fit for 3 dual-proc hosts, and getting new machines of the same type as the old machine a year later will be, well, a bit problematic, I'd think. Just a guess, though...
