There's no real issue adding a Windows Server 2008 DC into an existing environment, but it depends if you want to start using the new functionality or not. You will need a Windows Server 2003 forest functional level, and extend the schema if you want to do things like escrow Bitlocker keys, or add RoDCs to the environment
