I do something like this:

 

Change network password

Deactivate network account, delete after 30 days

~~~~~~~~~~~~~~~~~~~~~~~~~~

Burn "My Documents" to CD

~~~~~~~~~~~~~~~~~~~~~~~~~~

Download Exchange mailbox to PST file and burn to CD 

- Delete mailbox

- Add email address of terminated employee to supervisor or manager's
mailbox

~~~~~~~~~~~~~~~~~~~~~~~~~~

Change voicemail password

Forward voicemails and calls to supervisor or manager

~~~~~~~~~~~~~~~~~~~~~~~~~~

Do any of you have a process you can share for IT responsibilities when
employees are terminated?  I.E., disabling the account, archiving  PST
