I am not sure if you are talking about a VMware p2v but there are some
options in their forums. http://communities.vmware.com/thread/132031

They mention a repair install of Windows but this may or may not work for
you since you would be going from Windows 2003 Standard to Windows 2003 R2
Enterprise. I would guess this would be more of a upgrade in your case. I'm
sure if you call Microsoft they will help you since you have spare licenses
of R2.
