Just an idea--We have also just set up our first WS08 servers. What I had originally thought was a lock-down out-of-the-box problem actually turned out to be a GPO setting applying that we had long forgotten about. You might want to take a look at your GPOs, as in our case, it was a firewall setting that only took effect when the firewall was enabled. I know you already tried turning off the firewall, but there are many other GPO settings to look at.
Didn't end up having to "disarm" the settings, just get them right for WS08. I've not tried publishing printers yet, but have regular file shares set up and working.
