I've done the SBS 2003 -> SBS 2003 virtual h/w migration a couple of times now. It's easy. Lots of steps, but easy.
I've yet to see any of my SBS customers see any value in moving to SBS 2008. Regards, Michael B. When I migrate them to SBS2K8 it will be done with VM's. Please do send an update next week on how it goes (here or off-list is fine).
