I think people are talking about two different things here. Some people are talking about having *everything* on one physical machine. In that case, you've got a single point of failure in one machine, regardless of VMs or not. Unless it's a fairly small shop that would only have one server anyway, I can see where this would be an issue. Some people are talking about having all DCs in VMs, but multiple VM hosts. Assuming your VM hosts don't depend on AD, and you trust your VM infrastructure in general, I think this would be okay.
