Since cost is a major factor for your non-profit, I'd recommend considering an external Terrabyte drive and NTBackup for Exchange/SQL and system state. It works well and is cheap, but it is what it is - a secondary backup solution. The initial backup, depending on the size of your data, could take days, even weeks to complete. A restore could take just as long. I think it serves best as a redundant, offsite solution to a primary, onsite quick one. As for Mozy not having any agents for SQL and Exchange... I dug a little deeper and they do claim to be able to back them up, however their backup does not integrate with them and for exchange it will not purge the logs.
