As you mentioned however, if the original file is just an image wrapped in a pdf file, what you will get back is an image wrapped in a word file - still not able to be edited. And if you are going to OCR it anyway, most OCR software will put output to Word or Rich Text Format. J They can convert your PDF to a DOC file just fine and it's free, although you get quicker conversion and larger files if you pay for it.
