There is a technet or KB article (don't have it handy) called something like 
How to remove the First Exchange 2000 server in the organization and/or How to 
remove the Last Exchange 2000 Server in the Organization. There is a bunch of 
stuff you need to do so I'd review those.

Got tasked with a weird client site ...

They had Exchange 2000, recently upgraded domain to 2003r2 and added Exchange
2003 ... while preparing to remove original Exchange 2000 server, I see in the 
Exchange System Manager one other Exchange server, but that server no longer 
exists.  In about 6 months I've never heard of that server for email, and their 
tech basically ripped it off the wire and got rid of the hardware.  I ran the 
ntdsutil metadata cleanup to remove it from the domain controllers in AD, but 
still can't see how to remove it from Exchange...
any tips or ideas here ?
