Install the printer on another system in the network, and then share it out. Connect to it from you VM, and let it install the drivers that way.

As its not wireless (and therefore needs the usb connection first) I thought this would be simple. The setup program ties network and wireless setup together, so it bails as the vm doesn't have a USB setup on it? Anyone know a trick?
