I've been messing with 8mm tapes a lot in the last couple weeks. My camera has DV output and use a DV to Firewire connection. Just turning on the camera brings up an "import video" utility that seems to work fine. I end up converting the AVI to mpg with Prism.

I recently used those to turn about 10 old VHS home videos into DVD. Those are actually pretty impressive products. Simple, but easy. I've come across a few products that have simple hardware to "convert" RCA Jacks video/audio to USB, using accompanying software. These units are generally $40 - $60 (Cdn).
