Yeah, actually, the process you describe is very similar to the swingit migration (link provided below). I think he even covers 2003 to 2008 migrations.
http://www.sbsmigration.com/ I paid for the kit, and while I could've done everything there with research, I felt the $200 (in my case) was well worth it for having all the documentation in one place. On the two spots I had trouble during the process I was able to quickly scan through the docs and find out what I needed to do to fix it. I didn't use any of the utilities that came with it.
