In the last few months my team has migrated 5 SBS2008, 3 from scratch
because old server had AD and other problems and 2 using a migration
procedure documented by MS in which both servers run in parallel for a
couple o weeks, allowing for the seamless migration of roles,
including Exchange, with little down time. It works very well.
Unfortunately, I'm not in a good position now to send the link now but
will dig it out as soon as I can get to a PC.
