You should be doing a regular online backup for your Exchange server - something Exchange-aware. Honestly we often just use the built-in Windows backup and it's worked fine for us. We don't do brick-level. If we lose the whole server we need to restore the whole server anyhow.
You need to do an online backup because that's how the log files get purged. Ben M.
