Looks like I figured out my own problem:

In desperation, I attempted to do a "net use * \\Server\Share" as the user. 
Interestingly enough, it returned with a 2221 error: "User cannot be found".

Doing a search on that error lead me to a forum of somebody having a similar 
problem, and the fix was to remove the entry in "Stored User Names and 
Passwords". The equivalent in Windows 7 is "Manage Credentials".

Checking on this for the user, there was an entry to connect to the 
server\share as "DOMAIN\ USER". Notice the space...

After deleting this credential and a logout, everything worked perfectly.

I always feel weird replying to my own emails. Sm:)e.
