I would go with what others have suggested and perform the redirection via GPO of My Documents, with My Pictures following that as a subfolder. I also redirect Start Menu and Desktop to a shared folder that contains all the shortcuts that users ever need to use, but controls access to them via AD security groups that grant Read access to the shortcuts relevant to the group. This means that they can't clutter up their desktop with folders and huge files - this may or may not be adequate for your needs.
There's also the Application Data and Local Application Data folders to think about, but this is where it can get messy. The issue you are going to have is with things like Outlook signatures, Office Quick Access Toolbars, Favorites menus in IE, and.NK2 files in Outlook (the ones that populate the email addresses automatically for you). if you want these to follow people around or be backed up, you may need to dig a little deeper into what needs to be redirected. You don't particularly *have *to use redirection - Group Policy Preferences can now do file, folder and registry actions when you log in or out, based on a variety of triggers.
