I tend to just use all the downloads and documentation from the Citrix
website, and the Citrix forums themselves, combined with a few good books
I've picked up. I used to swear by the Metaframe Advanced Concepts Guide
download but I haven't seen it around since MPS 4.5. I'll get the titles of
the books I use day-to-day when I get back to work Monday. Brian Madden's
site is very good (http://www.brianmadden.com). There is also a fair bit of
Citrix knowledge around in the VMWare forums as most new Citrix
implementations seem to involve VMWare at some stage, although maybe that is
changing a little now as the virtualisation arena opens up a bit.

Building your own farm from scratch, if you have the software and
infrastructure to support such a test project, can be extremely useful. I
more or less got dropped straight into a XenApp 6 design and build six
months ago and I've learned a lot from that that is proving very handy in my
new role.

No doubt others will be able to provide some recommendations (that hopefully
I can also use) :-)
