The standard edition of OCS2007r2 can do this on one server. It will also provide you with additional nice tools in the way of desktop sharing and video conferencing between these folks should that be desirable later. If by security you mean secure communications between clients, then OCS2007r2 works for that as well.
Tools for retrieving the archived data is lacking but there is sample code for the SQL queries to build your own front end or a PowerShell script that works nicely.
