I had good success with roaming profiles in a high school. Makes sense there, mobile users within a campus environment, being able to access the same stuff wherever they go. I'm now in an environment where people leave the office with a notebook. Roaming profiles aren't such a good fit. My point is tread carefully and know what problem you're trying to solve with roaming profiles. We had some problems of profile sizes ballooning out of control. More goes into a profile than the Desktop and the My Docs folders.
If your problem is capturing important data, I recommend redirection. I also think Jim makes a great point about a place for user to store files that aren't forbidden, but aren't your responsibility or even necessary to backup.
