We redirect My Docs (but only enable offline files for laptops). Enabling offline files/folders will make the users "synchronize" every time they log on/log off.
This is can cause very heavy network traffic, especially over slow links. Also - with 2003, you can't choose which folders under My Docs to redirect, so it redirects everything. This includes "My music, My pictures, My Videos, etc..." so just make sure you really want/need those folders on your server. IIRC, in 2008 you can choose which folders to redirect.
