My co-worker found an HP alert about Proliant DL360 G6s (like this) where they can be subject to random reboots, exactly as we have been. Apparently, it's a known issue with this model server shipped before Nov 2009. Has to do with system board revision earlier than "0S". If the serial number is xxx947 or earlier, you may have it.
There's a "Online Flash Component for Windows - System Programmable Logic Device" update available.
