It won't work.

You either use domain\user or their userPrincipalName.

That's your choice. Period.

I wish it was that easy !!! :(

Hence we are scratching our heads to find alternate options to overcome that....

By creating Universal groups and adding them to local domain users ? I guess no 
one has suggested that so that is not a good idea clearly... :(

We are not using WINS

All clients are using Win 7 so the drop down menu does not exist anyways.

The clients would have to type the following domain\username in that 
case.....i.e. in Win 7

what we were discussing internally is as they don't have to do that in there 
local domain i.e. where the user & computer have been created to start off with 
they login as follows

username
password

that's all.

so when they move around between domains that does not work as the machine in 
that local domain has been built to a specific domain and the default domain is 
pointing to the local domain on that site when the machine was built...as 
opposed to where the user has migrated from

 I know this might sound like a stupid question to ask but I am looking around 
best practises and possible options.

Setup:
Single forest ( Windows Server 2008 R2 )
11 Child domains. ( Windows Server 2008 R2 )
Domain Functional Level : Windows Server 2008 R2
Users have been created in each child domain where the user resides.

Each site has there local Child DC's + F & P

Network is hub and spoke and the speeds are 1 GB per site.

Now since almost 3 years since this has been setup there was no requirement for 
users to move between sites simply due to distance; but since a few weeks due 
to market situations people are travelling between sites a lot more.

Requirement:
------------------
How best to allow them to use any machine anywhere in the forest they can login 
seamlessly with any special training. ( create a new universal group add users 
in the local domain to that group than add that UG to a local domain users 
group in all the other child domains ? )

Printing is not a problem as we have a virtual printing solution by which print 
jobs can be printed to any printer on any site and user needs to perform a 
biometric scan to print.
