Would it be possible to start up an application (Nuke) with this
realtime priority at launch so that we wouldn't have to do this manually
whenever a background render kicks in – or another, perhaps better solution?

There is the start command - from windows commandline try "help start" to see more.

"start /REALTIME Nuke6.3.exe"

You can start processes with a given priority level, but for some reason it seems to start with "high" even if you specify realtime.
Other levels seem to work as advertised.

There might be better solutions to the original problem, though.
