I’ve been running Nuke on a Mac Pro 6,1 (12 core / D700 / 64-128GB RAM) for 
about a year and it has been stable and very fast. No problems with the GPU.

If you plan on buying a Mac Pro I would hold off for a few weeks. The current 
model is at the end of the product cycle and a update should appear shortly 
with new GPU and CPU. The new CPU will probably be sitting in a new type 
socket, which will allow you to upgrade to future revisions of there Xeon. The 
current socket will not be compatible with future versions of the Xeon.

Depending on your budget the 6 core with the biggest GPU is the best buy. 
Obviously the 12 core / D700 packs the most punch for NUKE
