NCP/NCU is a bit spread out. Some properties and examples are given in Section 2 [1]. All properties for NCUs and ENMs (and also location and WLANs) are in Section 4 [2]. The nwamcfg(1M) draft manpage [3] also discusses all the properties and possible values. There are some changes that haven't made it to the manpages yet (which I sent to nwam-discuss yesterday).
