Andrew, Examine the ./configure output of ocropus. I'm guessing that the headers and/or the tesseract_full library were not detected, probably the tesseract_full library. I had tried to patch configure.ac so that the external package messages appear near the bottom of the output, more visible to people compiling the programs.
I would also use from the ocropus files section http://groups.google.com/group/ocropus/files the toautotools*20081127.diff versions of my patches, if you aren't doing so already.
