I've been working on a script to automatically build OCRopus and its dependencies on Mac 10.5. The slightly longer term plan (2 weeks) is to have install packages for it, but for now it's just a script. http://stuporglue.org/tako/build_ocr.sh It works for me, and I've done my best to remove previous installs of OCRopus, but I may have missed something. I'm going to try to test it on a clean OSX machine today or tomorrow. I use SVN Tesseract and OCRopus (at specific revisions) because they worked for me with minimal changes. It installs ImageMagick and Ghostscript because a slightly larger project I'm working on is a very simple Mac application that will take (almost) any image or PDF and OCR it.
