There isn't more documentation yet; we'll try to write up more for OCRopus 0.5. Until then, the set of components will probably still change, as well as where you can "plug them in". In part, that's why it's still called an "alpha" release. After 0.5, there should be a lot more stability, now that we have the component model in place.
