The only example I could find of using Drupal for documentation (after an admittedly quick look) was Drupal itself. (Drupal does have a nice documentation style guide: http://drupal.org/about/authoring ) Again, all formats/approaches are on the table, and of course, more examples of using Drupal for documentation are welcome -- I didn't look that long.
