On the iscsi-target box, when you started the iscsitarget in /var/log/messages is there any errors about the LUNs or devices you had defined not getting set up or any errors?

On the initiator/open-iscsi box, do you see anything in /var/log/messages? If you run

iscsiadm -m session -P 3

what is the output?
