You can disable periodic time synchronization by running the following command 
in the guest:

        vmware-toolbox-cmd timesync disable

The rest of the options have to be changed directly in VMX file. However it is 
recommended to allow VM to sync time after reboot or resume to avoid periods 
where VM time is wrong.
