I'm sure you're aware of this, but please remember that the questions you're asking at this point are Jetty questions, not OpenBD questions. We'll help as best we can but claiming the Ready2Run isn't ready to run isn't quite fair.
This seems to cover virtual hosting in Jetty: http://docs.codehaus.org/display/JETTY/Virtual+hostsSetting things up the way they show in their examples isn't working for you? If that's the case then you will likely get quicker answers on the Jetty forums.
Alan uses Jetty a lot but he's been traveling, and they're busy with GAE and the 1.1 release at the moment. I just got back in town myself today, but I will add this to my to-do list for this week and try my best to get you an answer if someone doesn't beat me to it. I've been meaning to dig into Jetty anyway but I use Tomcat regularly so Jetty is not my strong suit.
