I'm not a big fan of Tomcat after I've been using Jetty now for som
years... I do have a tomcat setup on one of viviotec's server but only
because of some missunderstanding at the time I ordered the server and the
simply setup OpenBD with tomcat wich is there standard deployment... And as
it was up and running I did't want to bother them to roll it back... That
said... There was a pretty OK doc on the old OpenBD WIKI backnin the days
which I think was written by Matt Woodward. If I remeber correctly I think
he re- created that docu on Google Doc's but can't find that link now.
 Ibwill try to contact Matt and see if he still have that Docu available
somewhere.

Regarding the other questions I can't really give any opinion on... besides
maybe that 2GB Ram might be somewhat low... But then again... That depends
on the app you deploy and how intensive the site/sites will be used...

As said will see if I can lookup Matt's docu about OpenBD/Tomcat/Apache on
CentOS
I know I used it som years agom when I did setup my first real OpenBD
system... Was on RedHat but that's the same thing...
