Your only sensitive choice, given your requirements (you don't want to know
about card internals), seems to be:
1) Choose a vendor that sells you a card with signature capabilities and
*also* provides you with a standard OCF signature & key generation card
services for its card (*)
2) Do your work only knowing OCF and never caring about the card...
This is a reasonable approach, if you don't want to mess with card
programming. Good luck with it, because you'll probably find very limited
card vendor support at the moment (but more is likely to come soon). Let us
know how many manufacturers can provide you with this, that would be
interesting to find out.
(*) You could always differentiate application & card vendors, provided you
use an open programmable card like JavaCard. In this case, the vendor
providing you with the application (Javacard applet) is the one that should
provide you with the OCF CardService...
