See public.kitware.com/VTK/documents.php for VTK file formats. There are quite a few including formats that use XML files and ones that support parallel processing.

You may also want to look up the "pvd" file format which adds support for transient data to the VTK formats. Its not very complex - basically, an XML file with a list of VTK files where each holds one time step. The only documentation for it, I believe, is in the book, "The ParaView Guide", from Kitware.
