We have currently openldap-servers-2.4.23-31.el6.x86_64 and want to
upgrade to whatever is the latest stable version. We have checked
2.4.44-24.el7_9 is the latest version comes with RHEL7.9.

Also looking at the openldap.org site, not sure which version is the
stable one and not software is available anything as RPM.

The openldap project only provides source.  It does not provide binaries.

Symas provides current OpenLDAP builds for RHEL7 and later at:
