Just create a new folder in the sandbox area, e.g. opennlp-ml and then use a maven project structure. Please use the subversion copy to get the files from the maxent project so they keep the history. I can help you with that. Should we use org.apache.opennlp.ml as package for this project? If we decide so we might want to change opennlp.tools as well to org.apache.opennlp.tools one day.
BTW, I'm now using Eclipse. Is there anything other than the code formatter file that I should install to make things flow better with your setup?
