I use the Xchat client (Ubuntu package xchat) which is a little less
'dumbed-down' than xchat-gnome that Ubuntu installs by default.

Pidgin can also connect to IRC servers as can some other chat clients,
including The Mozilla Chatzilla.

Here's a list of servers for those applications that don't already have
FreeNode in the server list:
