The Common Desktop Environment (CDE) was a proprietary desktop that Sun created. Sun has now shifted to the open source Gnome desktop. It is very customizable, so you should be able to set it up any way that you wish. You can add your own panels and launchers, and customize their behavior. Features include multiple desktops among other things.

If you don't care for Gnome and want to try other desktops, I believe there are some available from other repositories that you can download and try. You might want to check the desktop-disc...@opensolaris.org forum for more information.
