No. However, this isn't a problem. What you do is install to a
single-disk zfs pool, then add a second disk to the pool as a mirror.

Yes. Use the SXCE distribution, which lets you customize the
install. At least one of the choices has no GUI component.

Yes. In fact, it's bundled with the distribution. Install the
appropriate optional packages (I dont have one set up, so can't tell
you the names right now) and reboot and you should get a new boot
option for hypervisor mode.
