If you install Project Indiana's developer preview, you'll get ZFS
root. The installer it uses only supports ZFS :)

Unfortunately, liveupgrade, etc. aren't supported yet with Project
Indiana's developer preview; that's the caveat. (I know you're using
SXCE, just pointing this out...)
