Sure - Windows has no idea that it's on a RAID. At least, not the way I use it.
I use the BIOS utility that came with my motherboard, and set up my RAID's through that. Which is also why I can't get away with not having a driver in Solaris - while I could certainly use an IDE drive, I need to be able to read data off of my existing partitions.
